A simple kale salad with avocado
- 1 bunch Kale
- 1/2 an Avocado
- 1/3 an Onion, diced
- 1 cup Carrots, shredded
- 1-2 Lemons, to taste
- Drizzle Balsamic Vinegar
- Combine all ingredients in a bowl, mashing in avocado.
- Squeeze lemon over and stir in to taste.
- Let dish rest 20 minutes before serving so the flavors have time to meld.
- Garnish with nuts and dried fruit as you prefer. Almonds and cranberries? You bet.
