Zucchini Spaghetti & Pesto

  1. 2 large zucchini
  1. 3/4 Cup Cashews (or other nuts)
  2. 1/2 bunch Cilantro (or other green- spinach, basil..etc)
  3. 1/2 Cup Olive Oil
  4. Zest of one lemon
  5. 1 Cup Parmesan
  6. Salt
  7. Pepper
  1. 1) Boil water
  2. 2) Cut zucchini into thin strips and put in boiling water for just a few minutes- until tender
  3. 3) Make the pesto: Combine all ingredients in a food processor, salt and pepper to taste
  4. 4) Strain zucchini
  5. 5) Coat zucchini in pesto
  1. Using pine nuts and basil will make a traditional pesto.
