Zucchini Spaghetti & Pesto

Ingredients
- 2 large zucchini
Pesto
- 3/4 Cup Cashews (or other nuts)
- 1/2 bunch Cilantro (or other green- spinach, basil..etc)
- 1/2 Cup Olive Oil
- Zest of one lemon
- 1 Cup Parmesan
- Salt
- Pepper
Instructions
- 1) Boil water
- 2) Cut zucchini into thin strips and put in boiling water for just a few minutes- until tender
- 3) Make the pesto: Combine all ingredients in a food processor, salt and pepper to taste
- 4) Strain zucchini
- 5) Coat zucchini in pesto
Notes
- Using pine nuts and basil will make a traditional pesto.
